It is in the middle
of the vineyards of the minervois region that you find this
magnificent « bastide » dating back to the 18th
century, and it could easily change name to become the House
of Happiness.
Nothing in the surroundings will come and disturb the calm and
relaxing atmosphere that is to be found everywhere in the Languedoc
countryside.
With touches of ochre, sunshine and blue skies, this establishment
surrounded by olive trees is a peaceful haven where you will
no doubt enjoy stopping for a few hours, to enjoy a typically
Mediterranean way of life.
The restaurant, painted the
colour of sunshine, is close to a pool and a very nice little
hostel. It will charm you with its regional décor.
Sabine, the hostess, is all smiles and she knows better than
anyone how to welcome her guests - with all the attention needed
- into her beautiful dining room with warm tones, a refined
and delicate décor.
But more than often, people come to La Bastide for its talented
Chef, Hervé Dos Santos, originally from the Basque region
and member of the Jeunes Restaurateurs d’Europe association.
After his formal education,
Hervé learnt his trade with the greatest: the Ibarboure
brothers, Louis Grondard at Drouant in Paris and so many others…
He now brilliantly
orchestrates his own talents and finds in this relaxing and
sunny Languedoc region all the inspiration and creativity he
needs.

The traditional flavours of Mediterranean cuisine are now well
known to him and his compositions have this special flavour
of sunshine and happiness to them.
A light kind of cuisine,
with nothing superfluous, that is what awaits you in this magical
place.
Hervé wanted to compose a special ideal gourmet menu,
especially open onto his specialties.
Sabine will give you
the best advice possible on which wine of the region to choose
with your favourite dishes.
So come spend some
quality time in this little gem of the Languedoc region and
learn how to enjoy an exceptional place, in good hands thanks
to Hervé and Sabine.
