Once upon a time,
there was a little authentic and well preserved village…
Stud-farms and wide-open fields are numerous, cows and horses
can roam around freely; this is the Normandy of craftsmen, tanners
and weavers, and later the commerce of cattle…
It is at the
heart of this region that Jérôme Bansard decided
to settle 15 years ago.
Beuvron-en-Auge, located a few kilometers from the sea, not
far from the motorway to Deauville and its famous « planches
», reflects a Normandy so beautiful, so natural, that
it is hard to imagine.
It is a little Norman village, right
in the pays d’Auge, in magnificent surroundings of swamps, traditional
Norman farms in the middle of fields planted with heavy apple
trees.
It is a pleasure to take a walk in this preserved village,
among the most beautiful in France. Here there is no noise,
no publicity, and what a joy to find tradition and peace, for
the eyes and for the heart…
It is in the ancient and impressive covered market that the
Pavé d’Auge has chosen to settle. Beautiful traditional
Norman architecture, with little tiles and heavy paving stones,
the place is truly an invitation to a gourmet tasting.
Jérôme Bansard welcomes you in a big dining room,
with numerous alcoves and exposed beams, and he invites you
to taste the best of his compositions by the big fireplace.
It is a rather calm and not too excessive cuisine, but it is
rich of flavours and tradition, revisited specialties of the
region, adapted to the whims of fashion or to the season.
This
establishment is one of reference, well liked and sought after,
holding its place in the village and where it is always better
to book your table well in advance.
