This dish is really appreciated in the
Mediterranean basin. These small squids are also known as supions and calamari.
They'll bring an exotic taste to an ordinary pizza.
Ingredients (for
4 people)
1 pizza
pastry
400g of calamari
5 tomatoes
1 chopped clove
of garlic
1 onion sliced
thin
100g
black olives
a small jar of
anchovy
thyme
olive oil
salt, pepper
Procedure
Peel
the tomatoes and remove the pips. Slice them into tiny cubes.
Pour
one spoonful of olive oil into a frying pan, in a jiffy fry the
onions tthen add the garlic and tomatoes.
Salt and pepper. Simmer for
20 minutes. The tomato sauce is ready when all the water from the tomatoes
has evaporated.
Heat
the olive oil in a pan and add the calamari, that you have previously
been gutted, washed and dried. To avoid them becoming rubbery saute them for
exactly 3 minutes.
Place
the pastry over the oven pan, spread on the tomato sauce, sprinkle with
thyme. Add the calamari, place the anchovies in the form of
a
grid and add olives.
Preheat the oven
to 240°C and bring the pizza to the oven for 30 minutes.
