Cherry clafoutis

Cherries, blended into tender custard-like pastry, bring a slightly "tart" note to the sugary taste of this seasonal dessert.

Cherry clafoutis... but you can use blackberries, plums, prunes, apples or other fruit as well

Ingredients  (for 6 people)

  • 600 g fresh cherries

  • 90 g flour

  • 90 g sugar

  • 25 cl milk

  • 6 cl thick fresh double cream

  • 2 vanilla sugar

  • icing sugar

  • 2 eggs

  • 1 knob of butter for the mold

Procedure

  1. Butter a mould. Stone the cherries and put them on the bottom of the mould. Spread them out evenly.
     
  2. Preheat the oven to 210°C. Put the flour in a bowl. Add the eggs and whisk the mixture.
     
  3. Add the granulated sugar and the vanilla sugar, milk and the double cream. Mix it well.
     
  4. Pour over the cherries. Bake for 30 to 40 minutes in hot oven.
     
  5. Don't remove the cake from its mould, rather, serve it directly in the porcelain mould. Powder with icing sugar.

How to Serve :

Serve warm.
