Raclette

Raclette is a Savoyard cheese. Traditionally It is heated and then scraped ("racler" in French) on to the hot potatoes

Raclette with a tray for individual portions for each diner

Ingredients (for 6 people)

  • 1 raclette grill

  • 1,5 kg raclette (200 to 250 g per person)

  • 25 cl cream (optional)

  • 2 kg potatoes (2 to3 potatoes per person)

  • 6 slices smoked ham

  • 6 slices white ham

  • 12 slices pancetta

  • 12 slices bacon

  • 12 slices of Grison meat

  • 1 jar of gherkins and small onions

Procedure

  1. Put the meat on one or several plates. Cut the raclette cheese so that the pieces are small enough to be put in the raclette trays.

    If you are using a traditional vertical grill, you should buy half a cheese. Every guest can scrape his cheese bits on his plate when he wants to.

Raclette cheese cut in half and exposed to heat which melts the cheese which is then scraped off on to the diner's potatoes.

  1. Boil the potatoes in water for 30 to 35 minutes. Serve the gherkins and small onions in vinegar in several dishes.
     
  2. Preheat the raclette grill (this device has trays. You have to remove them from the grill, before you turn it on). When the grill is hot, you can put it on the table.

How to Serve :

You can put cream on the potatoes.
