Traditional pot-au-feu

A pot-au-feu could literally be translated by "pan on a fire". So, you don't really need any special utensils for this recipe. made with beef, marrow and lots of vegetables. Cook it with your own touch.

Pot au feu. A full balanced meal of meat and vegetables.

Ingredients (for 4 people)

  • 500 g rump roast or top or bottom round

  • 500 g beef shanks

  • 2 beef marrows

  • 1 kg potatoes

  • 5 leeks

  • 5 carrots

  • 3 beets cut in two parts

  • 1 celery stick

  • 1 onion pricked with 2 cloves

  • 2 cloves of garlic

  • 1 bouquet garni

  • salt and pepper

Procedure

  1. Rinse and peel all the vegetables.
     
  2. Boil 2 liters of water in a pot with all the vegetables (except the potatoes) and herbs.
     
  3. When the water starts to boil, add the meat and close the pressure cooker. Cook for 1 hour and a quarter from the moment, when the cooker starts to "murmur".
     
  4. Add the peeled  potatoes and the marrow. Close the cooker again and cook for 10 minutes.
     
  5. Drain the meat and put it on a plate with the vegetables around.

How to Serve :

Serve warm on a plate.
