Chicken and Morel Mushrooms
Prized by gourmet cooks, Morel mushrooms are
particularly used for French cuisine. They always add savory taste to white
meat.

Ingredients (for
6 people)

1 large chicken - 80 cl dry white wine

200 g fresh morel mushrooms
- 3 shallots
-
2 tablespoons oil
- 1 tablespoon mustard
-
1 teaspoon cornstarch
- salt and pepper
Procedure
- Cut the chicken in large pieces and remove its skin.

Peel
the shallots and chop them. In a frying pan sweat the shallots on some
oil and then brown the chicken meat to a nice golden color.

Pour the white wine in, salt and pepper. Bring to a boil. Turn down the heat and simmer for 30 minutes with the lid on.

Prepare the sauce: gently mix mustard, fresh cream and corn starch. Pour in the frying pan after 30 minutes of cooking.

Wash
the morel mushrooms and dry them carefully. Add them after 45 minutes
of cooking and cook them for 15 minutes without the lid on. Stir gently.
How to Serve :
Serve immediately.
